Why this exists
I'm a 20-year line cook. I built the tool that would have saved me.
I grew up in a Paris café-tobacconist-brasserie. 20 years on the line. Then two restaurants in court-supervised restructuring — La Verrerie in Gaillac, the Lunch Wagon in Albi. Both turned around and sold.
On both, the same wall: I couldn't see my real numbers in time. Food cost discovered at year-end. Stock drift uncovered too late. HACCP rebuilt at midnight before inspections.
